Here’s a classic, comforting Chicken and Broccoli Rice Casserole—creamy, filling, and easy to make in one dish.

🧾 Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 2 cups cooked rice (white or brown)
  • 2–3 cups broccoli florets
  • 1 can cream of chicken soup (or homemade white sauce)
  • 1 cup milk (or cream for richer texture)
  • 1–2 cups shredded cheese (cheddar works best)
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tbsp butter or oil

🔥 Instructions

1. Prep ingredients

  • Cook rice and chicken if not already prepared
  • Steam or lightly boil broccoli until just tender (not mushy)

2. Make the creamy base

  • In a pan, heat butter
  • Sauté onion and garlic until soft
  • Stir in cream of chicken soup and milk
  • Mix until smooth and slightly warm

3. Combine everything

  • In a large bowl, mix:
    • chicken
    • rice
    • broccoli
    • creamy sauce
    • half the cheese
  • Season with salt and pepper

4. Bake

  • Pour mixture into a baking dish
  • Top with remaining cheese
  • Bake at 180°C (350°F) for about 20–25 minutes
    until bubbly and golden on top

🍽️ Optional toppings

  • Bread crumbs for crunch
  • Extra cheese layer
  • Paprika or chili flakes for color and flavor

💡 Tips

  • Don’t overcook broccoli before baking—it will soften more in the oven
  • Rotisserie chicken works great for quick prep
  • You can swap cream of chicken soup with a homemade white sauce for a fresher taste
