Potato meatball bake

Here’s a simple and tasty potato meatball bake—comfort food style, easy for home cooking.

Ingredients

For meatballs:

  • 500 g minced meat (beef, chicken, or mutton)
  • 1 small onion (finely chopped)
  • 2–3 garlic cloves (minced)
  • 1 egg
  • 2 tbsp breadcrumbs (or soaked bread)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp chili flakes or paprika (optional)
  • 1 tsp cumin (optional)

For potato layer:

  • 4–5 medium potatoes (sliced thin or parboiled rounds)
  • Salt & pepper to taste
  • 1 tbsp oil or butter

For sauce:

  • 2 tbsp oil
  • 1 onion (chopped)
  • 2 tomatoes (chopped or 1 cup tomato puree)
  • 1 tsp salt
  • 1 tsp paprika or red chili powder
  • 1 tsp oregano or mixed herbs
  • ½ cup water or stock

Topping:

  • 1–1.5 cups grated cheese (optional but recommended)

Instructions

1. Make the meatballs

Mix minced meat with onion, garlic, egg, breadcrumbs, and spices.
Shape into small meatballs and set aside.

2. Prepare the potatoes

Slice potatoes thinly or parboil them for 5–7 minutes so they soften slightly.
Lightly season with salt, pepper, and a bit of oil.

3. Make the sauce

Heat oil in a pan.
Cook onion until soft, add tomatoes and spices, and simmer until thickened. Add a little water if needed.

4. Assemble the bake

In a baking dish:

  • Spread a layer of potatoes
  • Add meatballs on top
  • Pour sauce evenly over everything

5. Bake

Cover with foil and bake at 180°C for 35–40 minutes.
Then uncover, add cheese, and bake another 10–15 minutes until golden and bubbly.


Serving idea

Serve hot with salad, yogurt sauce, or garlic bread. It’s filling enough to be a full meal on its own.
