Methi Masoor Khichdi is a wholesome, comforting South Asian one-pot meal made with rice, red lentils, and fresh fenugreek leaves.

🌿 What it is

  • “Khichdi” = a soft, mixed rice and lentil dish
  • “Masoor” = red lentils (quick-cooking, mild flavor)
  • “Methi” = fenugreek leaves, which add a slightly bitter, aromatic taste

🧄 Key ingredients

  • Rice
  • Masoor dal (red lentils)
  • Fresh methi (fenugreek leaves)
  • Onion, garlic, ginger
  • Spices: turmeric, cumin, red chili, salt
  • Oil or ghee

  1. Lightly sauté onions, garlic, and spices
  2. Add rice and masoor dal
  3. Mix in chopped methi leaves
