Kouign-amann is a rich, buttery pastry from Brittany, France, known for its crisp caramelized layers, flaky interior, and sweet, almost candy-like crust. It’s made from laminated dough with lots of butter and sugar that bake into a deep golden caramel.

1. Make the dough

2. Prepare butter block

  • Flatten cold butter into a square between parchment paper.
  • Chill until firm but pliable.

3. Laminate (layer dough + butter)

  • Roll dough into a rectangle.
  • Place butter in the center and fold dough over it.
  • Roll out gently, then fold like a letter.
  • Chill 20–30 minutes.
  • Repeat rolling and folding 2–3 times.

4. Add sugar layers

  • Roll dough out one final time.
  • Sprinkle generously with sugar.
  • Fold dough into a thick layered shape (like a square or rounds).

5. Shape & proof

  • Place in buttered muffin tins or a baking pan.
  • Let rest 20–30 minutes.

6. Bake

  • Preheat oven to 190°C (375°F).
  • Bake for 30–40 minutes until deep golden brown and caramelized.

7. Cool & serve

  • Let cool slightly so caramel sets.
  • Remove carefully—sugar will be crisp and glassy.
