Yakisoba

Yakisoba is a popular Japanese stir-fried noodle dish made with savory sauce, vegetables, and usually pork or chicken. Despite the name, it doesn’t use soba (buckwheat) noodles—instead, it uses wheat-based noodles similar to ramen.

🧾 Ingredients

🍜 Noodles & protein

  • 2 packs yakisoba noodles (or ramen noodles, cooked and drained)
  • 1 cup pork, chicken, or shrimp (thinly sliced)
  • 1–2 tbsp oil

🥕 Vegetables

  • ½ onion (sliced)
  • 1 cup cabbage (chopped)
  • 1 carrot (julienned)
  • 1 bell pepper (sliced)
  • Optional: bean sprouts, mushrooms

🥣 Yakisoba sauce

  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp oyster sauce (optional but traditional)
  • 1 tsp ketchup (adds slight sweetness)
  • 1 tsp sugar or honey
  • 1 tsp sesame oil (optional)

🍽️ Garnish

  • Pickled ginger (beni shoga)
  • Aonori (seaweed flakes)
  • Sesame seeds

👨‍🍳 Instructions

1. Prepare noodles

  • If using fresh yakisoba noodles, loosen them with hot water.
  • If using ramen, cook and drain well.

2. Cook protein

  • Heat oil in a large pan or wok.
  • Stir-fry pork or chicken until cooked through.
  • Remove and set aside.

3. Stir-fry vegetables

  • In the same pan, cook onion, carrot, cabbage, and bell pepper.
  • Stir-fry on high heat for 3–5 minutes until slightly tender but still crisp.

4. Combine noodles

  • Add noodles and cooked protein back into the pan.
  • Toss everything together.

5. Add sauce

  • Mix soy sauce, Worcestershire, oyster sauce, ketchup, sugar, and sesame oil.
  • Pour over noodles and stir-fry until evenly coated.

6. Serve

  • Plate hot and garnish with pickled ginger, sesame seeds, or seaweed flakes.
