🌶️🥓 Kurkure Chaap (Crispy Spicy Street-Style Chaap)
Kurkure Chaap is a popular Indo-street-style dish where soya chaap is coated in a crunchy, spicy “Kurkure-style” crumb coating and fried or air-fried until crispy.
🧾 Ingredients:
For chaap:
- 250g soya chaap sticks
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp chili powder
- 1 tbsp lemon juice
For coating:
- 1 cup crushed cornflakes or breadcrumbs
- ½ cup crushed snack coating (like spicy corn chips or seasoned crumbs)
- 2 tbsp cornflour
- 2 tbsp all-purpose flour
- 1 tsp chili flakes
- 1 tsp chaat masala
- ½ tsp black pepper
- Water (as needed for batter)
For frying:
- Oil (for deep fry or shallow fry)
👩🍳 Method:
1. Prep chaap:
- Boil or steam soya chaap for 5–7 minutes.
- Drain and pat dry.
- Mix with salt, turmeric, chili powder, and lemon juice. Let it sit for 10 minutes.
2. Make coating:
- Mix cornflour, all-purpose flour, spices, and water to form a thick batter.
3. Crunch coating:
- Roll chaap in batter.
- Coat generously with crushed cornflakes and spicy crumbs (this gives the “kurkure” crunch).
4. Cook:
- Deep fry until golden and crispy
OR - Air fry at 180°C for 12–15 minutes, brushing lightly with oil.
🍽️ Serve with:
- Mint chutney
- Mayo garlic dip
- Sliced onions and lemon
