Here’s a classic, cozy Beef Pot Roast with Potatoes, Carrots, and Mashed Potatoes that tastes like it cooked all day (because it did).


🥩 Beef Pot Roast Dinner

Pot Roast Ingredients

  • 3–4 lb chuck roast
  • Salt & black pepper
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, smashed
  • 3 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup red wine (optional, but great)
  • 1 tbsp Worcestershire sauce
  • 2 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves
  • 5–6 carrots, big chunks
  • 1½ lb baby potatoes or Yukon golds, halved

Mashed Potatoes Ingredients

  • 2 lb potatoes, peeled & chopped
  • 4 tbsp butter
  • ½–¾ cup warm milk or cream
  • Salt

How to Make It

1️⃣ Sear the Roast

  • Pat roast dry and season generously with salt & pepper.
  • Heat oil in a Dutch oven over medium-high.
  • Sear roast hard on all sides until deeply browned. Remove and set aside.

2️⃣ Build the Flavor

  • Add onions to the pot; cook until softened.
  • Stir in garlic and tomato paste; cook 1 minute.
  • Deglaze with wine (or broth), scraping up all the browned bits.
  • Add broth, Worcestershire, thyme, rosemary, and bay leaves.

3️⃣ Braise Low & Slow

  • Return roast to the pot.
  • Cover and cook:
    • Oven: 300°F (150°C) for 3–3½ hours
    • Stovetop: very low simmer, 3 hours
  • Flip roast once halfway through.

4️⃣ Add Veggies

  • Add carrots and potatoes during the last 60–75 minutes.
  • Cover and continue cooking until meat is fork-tender and veggies are soft.

Mashed Potatoes

  1. Boil potatoes in salted water until fork-tender.
  2. Drain well.
  3. Mash with butter, warm milk, and salt until fluffy and smooth.

Serve It Up 🍽️

  • Slice or shred the pot roast.
  • Spoon those rich juices over the meat.
  • Plate with carrots, potatoes, and a heroic mound of mashed potatoes.
