Here’s a cozy, hearty vegetable soup recipe that’s easy to make and packed with flavor—perfect for any day you want something warm and nourishing:


🥕 Classic Vegetable Soup

🍽 Serves 4–6

🕒 Prep + Cook: 40 minutes


Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium potato, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth or water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt & pepper, to taste
  • Optional: 1 cup green beans, chopped
  • Optional: handful fresh spinach or kale near the end

Instructions:

  1. Sauté veggies:
    Heat olive oil in a large pot over medium heat.
    Add onion, garlic, carrots, and celery. Cook 5–7 minutes until softened.
  2. Add potatoes and other veggies:
    Stir in potatoes, zucchini, bell pepper (and green beans if using). Cook 2–3 minutes.
  3. Add liquids & herbs:
    Pour in diced tomatoes (with juice) and vegetable broth.
    Add thyme, oregano, bay leaf, salt, and pepper.
  4. Simmer:
    Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, until all veggies are tender.
  5. Finish with greens:
    Stir in spinach or kale if using, cook another 2–3 minutes until wilted.
  6. Adjust seasoning and serve hot.

Tips:

  • Add cooked beans or lentils for protein
  • Swap in your favorite veggies based on season
  • For extra flavor, add a splash of lemon juice or vinegar before serving
  • Serve with crusty bread or a sprinkle of Parmesan
