🍫 No-Bake Fruit & Chocolate Oat Bars

Ingredients

  • 2 cups rolled oats
  • 1 cup natural peanut butter (or almond butter)
  • 1/3 cup honey or maple syrup
  • 1/2 cup chopped dried fruit (raisins, cranberries, apricots, dates)
  • 1/3–1/2 cup dark chocolate chips
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Warm the binder
    In a small saucepan over low heat, gently warm the peanut butter and honey/maple syrup until smooth and pourable. Stir in vanilla and salt.
  2. Mix
    In a large bowl, combine oats and dried fruit. Pour the warm mixture over and stir well. Let cool slightly, then fold in chocolate chips.
  3. Press
    Line an 8×8-inch pan with parchment. Press mixture in very firmly (this step prevents crumbly bars).
  4. Chill
    Refrigerate 1–2 hours until set.
  5. Slice
    Lift out, cut into bars, and store in the fridge for up to a week.

Tips for Perfect Texture

  • Too crumbly? Add 1–2 tbsp more nut butter or syrup.
  • Too soft? Add a handful more oats.
  • Want extra protein? Stir in 2–3 tbsp chia seeds or ground flax.
