Cheesy herb mashed potato puffs are crispy on the outside, fluffy and cheesy inside—perfect as a snack, side, or even a way to use leftover mashed potatoes.


Cheesy Herb Mashed Potato Puffs

Ingredients

  • 2 cups mashed potatoes (cold works best)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 egg
  • 2–3 tbsp flour (or breadcrumbs)
  • 2 tbsp chopped fresh herbs (parsley, coriander, or chives)
  • 1–2 cloves garlic (minced or 1/2 tsp garlic powder)
  • Salt & pepper to taste
  • Optional: chili flakes, paprika

Instructions

1. Mix

In a bowl, combine:

  • mashed potatoes
  • cheese
  • egg
  • flour/breadcrumbs
  • herbs + garlic
  • seasoning

Mix until it holds together like a soft dough.


2. Shape

  • Scoop small portions and roll into balls
    or
  • Spoon into a greased muffin tray for a neater “puff” shape

3. Cook (choose your method)

Oven

  • Preheat to 200°C (400°F)
  • Bake 20–25 minutes until golden

Air fryer

  • Temp: 190°C (375°F)
  • Time: 10–15 minutes
  • Flip halfway for even crisping

Pan-fry (extra crispy)

  • Shallow fry until golden on all sides

Tips for best results

  • Cold, slightly dry mashed potatoes work best (avoid very runny mash)
  • Add a little extra flour if the mixture feels too soft
  • Sprinkle extra cheese on top before baking for a crispy crust
  • A touch of butter brushed on top = better color and flavor

Flavor ideas

  • Spicy: add green chilies + chili flakes
  • Garlic butter: mix melted butter + garlic on top after baking
  • Loaded style: add small bits of cooked chicken or veggies
