1. Roast the potatoes first
- Toss potatoes with oil, salt, pepper, and paprika.
- Roast at 200°C (390°F) for 25–35 minutes until golden and crispy.
2. Cook the lamb chops
- Mix olive oil, garlic, herbs, salt, pepper, and lemon juice.
- Rub onto lamb chops and let sit 10–20 minutes (optional but better flavor).
