🍜 Egg Chowmein (Quick Street-Style Noodles)

A simple, flavorful stir-fried noodle dish with eggs, veggies, and soy-based seasoning—fast like street food, easy at home.


đź§ľ Ingredients

  • 200g noodles (chowmein or spaghetti works)
  • 2–3 eggs
  • 2 tbsp oil
  • 3 garlic cloves (finely chopped)
  • 1 small onion (sliced)
  • 1 cup shredded cabbage
  • ½ cup carrots (julienned or thinly sliced)
  • ½ capsicum (optional)
  • 2–3 tbsp soy sauce
  • 1 tbsp chili sauce (optional)
  • 1 tsp vinegar or lemon juice
  • ½ tsp black pepper
  • Salt to taste (go light—soy sauce is salty already)
  • Spring onions (optional garnish)

👨‍🍳 Instructions

1. Cook noodles

  • Boil noodles until just tender (don’t overcook)
  • Drain and toss with a little oil to prevent sticking

2. Scramble eggs

  • Heat 1 tbsp oil in a pan
  • Add eggs and scramble lightly
  • Remove and set aside

3. Stir-fry veggies

  • Add remaining oil
  • SautĂ© garlic and onions for 1 minute
  • Add carrots, cabbage, capsicum
  • Stir-fry on high heat for 2–3 minutes (keep them slightly crunchy)

4. Add noodles & seasoning

  • Add cooked noodles
  • Add soy sauce, chili sauce, vinegar, pepper, salt
  • Toss well on high heat

5. Combine

  • Add scrambled eggs back in
  • Mix everything evenly

🍽️ Serve

  • Garnish with spring onions
  • Serve hot as a snack, dinner, or street-style meal
