🥩🍳 Chicken-Fried Steak (Crispy Southern Comfort Food)

Chicken-fried steak is a tenderized beef cut that’s breaded, fried until crispy, and served with creamy white gravy. Despite the name, it’s beef—not chicken—and it’s a Southern classic.

🧾 Ingredients (4 servings)

Steak

  • 4 cube steaks (or tenderized round steak)
  • 1 cup all-purpose flour
  • 2 eggs
  • ½ cup milk (for egg wash)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Oil for frying (vegetable or canola)

Cream gravy

  • 2 tbsp pan drippings or butter
  • 2 tbsp flour
  • 2 cups milk (warm)
  • Salt & black pepper to taste
  • Optional: pinch of cayenne for heat

👨‍🍳 Instructions

1. Prep the steaks

  • Pat steaks dry.
  • Season with salt, pepper, paprika, and garlic powder.

2. Set up breading station

  • Bowl 1: flour + salt + pepper
  • Bowl 2: eggs + milk (whisked)
  • Bowl 3: seasoned flour again (for double coating)

3. Bread the steak

  • Dredge steak in flour → egg wash → flour again.
  • Press coating firmly so it sticks well.

4. Fry

  • Heat oil in a pan to medium-high.
  • Fry steaks 3–5 minutes per side until golden and crispy.
  • Drain on paper towels.

💡 Tip: Don’t overcrowd the pan or coating will fall off.

5. Make cream gravy

  • Keep 2 tbsp oil/drippings in pan.
  • Add flour and whisk for 1–2 minutes (light roux).
  • Slowly pour in warm milk while whisking.
  • Cook until thick and smooth.
  • Season with salt, pepper, and optional cayenne.

6. Serve

  • Pour gravy generously over hot fried steak.
  • Serve immediately.

🍽️ Best sides

  • Mashed potatoes 🥔
  • Green beans 🥬
  • Biscuits 🥐
  • Coleslaw 🥗

💡 Tips for perfect chicken-fried steak

  • Cube steak is already tenderized—ideal choice.
  • Double dredging = extra crispy crust.
  • Let oil stay steady (too hot burns coating, too cool makes it soggy).
  • Fresh gravy tastes best right after cooking.

🔥 Variations

  • Spicy version: add hot sauce or cayenne to gravy 🌶️
  • Cheesy gravy: stir in cheddar for extra richness 🧀
  • Air fryer version: lighter crisp alternative
  • Country-style extra thick gravy: more flour for thicker sauce
