This is a simple, crispy, savory side dish—golden potatoes roasted with sweet caramelized onions and lots of garlic. It goes with almost anything: chicken, steak, fish, or even as a snack.

đź§ľ Ingredients

  • 1 kg potatoes (baby potatoes or cut into chunks)
  • 1 large onion (sliced into wedges)
  • 4–6 cloves garlic (minced or whole smashed cloves)
  • 3–4 tbsp olive oil (or melted butter)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp paprika (optional for color & flavor)
  • 1 tsp dried rosemary or thyme (optional but recommended)

1. Preheat oven

  • Set oven to 200°C (400°F).

2. Prep the vegetables

  • Wash and cut potatoes into even-sized pieces.
  • Slice onions into thick wedges so they don’t burn too quickly.

3. Season everything

  • In a large bowl, toss potatoes, onions, and garlic with:
    • olive oil
    • salt
    • pepper
    • paprika
    • herbs

Make sure everything is evenly coated.

4. Roast

  • Spread mixture on a baking tray in a single layer.
  • Roast for 35–45 minutes, flipping halfway through.
  • Potatoes should be golden, crispy on the edges, and soft inside.

5. Optional finishing touch

  • Sprinkle a little extra salt or fresh herbs after roasting.
  • Add a small drizzle of butter for extra richness.

  • Serve hot as a side dish or add a dipping sauce like:

    • ketchup
    • yogurt herb dip

  • Don’t overcrowd the tray—crispy edges need space.
  • Cut potatoes evenly so they cook at the same rate.
