Cajun White Chicken Chili is a bold, creamy twist on classic white chicken chili, packed with smoky Cajun spices, tender chicken, and hearty beans. Here’s a solid, flavor-forward recipe you can make at home:

🌶️ Cajun White Chicken Chili

🛒 Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless chicken breast or thighs (cut into bite-size pieces)
  • 1 medium onion (chopped)
  • 1 green bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 2 cans white beans (like cannellini or great northern), drained & rinsed
  • 1 cup corn (optional)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp thyme
  • 1–2 tbsp Cajun seasoning (adjust to taste)
  • Salt & black pepper to taste
  • Juice of 1 lime

🔥 Cajun seasoning (if you don’t have store-bought)

Mix:

  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp thyme
  • 1/4 tsp black pepper
  • 1/2 tsp salt

👩‍🍳 Instructions

  1. Heat oil in a large pot over medium heat. Add chicken, season lightly, and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion and bell pepper until softened (about 5 minutes). Add garlic and cook for 1 minute.
  3. Stir in Cajun seasoning, paprika, oregano, and thyme—toast briefly for extra flavor.
  4. Pour in chicken broth, add beans and corn, and bring to a simmer.
  5. Return chicken to the pot and cook for 10–15 minutes until fully cooked.
  6. Lower heat and stir in cream. Simmer gently (don’t boil) until thickened.
  7. Finish with lime juice, adjust salt/pepper, and taste for spice.

🍽️ Serving ideas

  • Top with chopped cilantro, green onions, or shredded cheese
  • Add a dollop of sour cream or yogurt
  • Serve with crusty bread, rice, or tortilla chips

🔥 Tips
