Lemon Bisque

A lemon bisque is a smooth, creamy, slightly tangy soup with a bright citrus flavor. It can be made vegetarian or with seafood (like shrimp), but the classic version is a silky lemon-cream soup that feels light yet rich.

🛒 Ingredients

  • 2 tbsp butter
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp all-purpose flour (for thickness)
  • 3 cups chicken or vegetable broth
  • 1 cup milk or cooking cream
  • 1/2 cup heavy cream (for richness)
  • Zest of 1 lemon
  • 3–4 tbsp fresh lemon juice (adjust to taste)
  • Salt & black pepper
  • Optional: pinch of nutmeg or white pepper
  • Optional garnish: parsley or croutons

🔥 Step 1: Build the base

  • Melt butter in a pot over medium heat.
  • Add onion and cook until soft and translucent.
  • Add garlic and sauté for 30 seconds.

🌾 Step 2: Thicken the soup

  • Stir in flour and cook for 1–2 minutes (this removes raw taste).
  • Slowly pour in broth while whisking to avoid lumps.

🍲 Step 3: Make it creamy

  • Add milk and simmer gently for 5–8 minutes until slightly thickened.
  • Stir in heavy cream for a smooth, velvety texture.

🍋 Step 4: Add lemon flavor

  • Add lemon zest first (for aroma).
  • Then add lemon juice gradually—taste as you go so it doesn’t become too sour.
  • Season with salt, pepper, and optional nutmeg.

🍽️ Step 5: Serve

  • Simmer 2–3 more minutes.
  • Serve hot with parsley or crunchy croutons on top.
