This is an easy one-pan baked version of sweet and sour chickenโ€”crispy edges, sticky sauce, and roasted vegetables with pineapple for that classic sweet-tangy flavor.

๐Ÿ›’ Ingredients

  • 500g chicken breast or thighs, cut into chunks Chicken
  • 1 red bell pepper (chunked)
  • 1 green bell pepper (chunked)
  • 1 onion (chunked)
  • 1 cup pineapple chunks Pineapple

For coating:

  • 2 tbsp cornstarch
  • 1 tbsp oil
  • Salt & black pepper

Sweet & sour sauce:

  • 1/3 cup ketchup
  • 3 tbsp soy sauce
  • 3 tbsp vinegar (white or apple cider)
  • 2โ€“3 tbsp brown sugar or honey
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch + 3 tbsp water (slurry)

๐Ÿ”ฅ Step 1: Prep the chicken

  • Preheat oven to 200ยฐC (400ยฐF).
  • Toss chicken with salt, pepper, cornstarch, and a little oil.
  • Spread evenly on a lined sheet pan.

๐Ÿ— Step 2: First bake (crisp the chicken)

  • Bake chicken for 15 minutes until slightly golden (not fully cooked yet).

๐Ÿซ‘ Step 3: Add vegetables

  • Add bell peppers, onion, and pineapple to the tray.
  • Toss lightly with a drizzle of oil.

๐Ÿฏ Step 4: Make the sauce

  • Mix ketchup, soy sauce, vinegar, sugar, and garlic.
  • Heat briefly in a pan.
  • Add cornstarch slurry and cook until slightly thickened.

  • Pour sauce over chicken and vegetables.
  • Toss everything on the sheet pan.
  • Bake another 10โ€“15 minutes until sticky and caramelized.

  • Serve hot over steamed rice or noodles.
  • Garnish with sesame seeds or green onions if you like.
