๐๐ฅข Sheet Pan Sweet and Sour Chicken
This is an easy one-pan baked version of sweet and sour chickenโcrispy edges, sticky sauce, and roasted vegetables with pineapple for that classic sweet-tangy flavor.
๐ Ingredients
- 500g chicken breast or thighs, cut into chunks Chicken
- 1 red bell pepper (chunked)
- 1 green bell pepper (chunked)
- 1 onion (chunked)
- 1 cup pineapple chunks Pineapple
For coating:
- 2 tbsp cornstarch
- 1 tbsp oil
- Salt & black pepper
Sweet & sour sauce:
- 1/3 cup ketchup
- 3 tbsp soy sauce
- 3 tbsp vinegar (white or apple cider)
- 2โ3 tbsp brown sugar or honey
- 2 cloves garlic (minced)
- 1 tbsp cornstarch + 3 tbsp water (slurry)
๐ฅ Step 1: Prep the chicken
- Preheat oven to 200ยฐC (400ยฐF).
- Toss chicken with salt, pepper, cornstarch, and a little oil.
- Spread evenly on a lined sheet pan.
๐ Step 2: First bake (crisp the chicken)
- Bake chicken for 15 minutes until slightly golden (not fully cooked yet).
๐ซ Step 3: Add vegetables
- Add bell peppers, onion, and pineapple to the tray.
- Toss lightly with a drizzle of oil.
๐ฏ Step 4: Make the sauce
- Mix ketchup, soy sauce, vinegar, sugar, and garlic.
- Heat briefly in a pan.
- Add cornstarch slurry and cook until slightly thickened.

- Pour sauce over chicken and vegetables.
- Toss everything on the sheet pan.
- Bake another 10โ15 minutes until sticky and caramelized.

- Serve hot over steamed rice or noodles.
- Garnish with sesame seeds or green onions if you like.
