🥘 Asparagus Stuffed Chicken (Oven-Baked)

🧂 Ingredients (2–4 servings)

  • 2 large chicken breasts (boneless, skinless)
  • 8–12 asparagus spears (trimmed)
  • 4–6 slices mozzarella or cheddar cheese (or shredded)
  • 2 tbsp cream cheese (optional, for extra creaminess)
  • 2 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Toothpicks or kitchen twine

👩‍🍳 Instructions

1. Prep the chicken

  • Slice each chicken breast horizontally (like a pocket), but don’t cut all the way through.
  • Lightly pound if needed so it opens evenly.

2. Season

  • Mix salt, pepper, garlic powder, and paprika.
  • Rub seasoning all over the chicken inside and out.

3. Add filling

  • Place 2–3 asparagus spears inside each chicken breast.
  • Add cheese (and cream cheese if using).
  • Close the chicken and secure with toothpicks.

4. Cook

Oven method (best):

  • Preheat oven to 200°C (400°F)
  • Place chicken in a greased baking dish
  • Drizzle olive oil on top
  • Bake for 25–30 minutes, or until chicken is fully cooked (internal temp ~75°C / 165°F)

Optional crisp finish:

  • Broil for 2–3 minutes at the end for golden top

  • Roasted vegetables
  • Light salad with lemon dressing

🔥 Tips for best results

  • Don’t overstuff or it may leak while cooking
  • Wrap bacon around the chicken for extra flavor (optional upgrade)
