Roasted Cranberry & Goat Cheese Flatbread—sweet, tangy, creamy, and perfect as an appetizer or light meal.

🧂 Ingredients (1 large flatbread / 2–3 servings)

Base

  • 1 flatbread, naan, or pizza base
  • 1–2 tbsp olive oil

Toppings

  • 1/2 cup cranberries (fresh or dried; fresh gives best roasted flavor)
  • 100–120g goat cheese (crumbled)
  • 1/2 small red onion (thinly sliced, optional but recommended)
  • 1–2 tsp honey (plus extra for drizzling)
  • 1 tsp balsamic vinegar (optional for depth)
  • Salt & black pepper to taste

Optional finishing

  • Fresh arugula (rocket)
  • Chopped walnuts or pecans
  • Fresh thyme or rosemary

👩‍🍳 Instructions

1. Preheat

  • Heat oven to 200°C (400°F).

2. Prep base

  • Place flatbread on a baking tray.
  • Brush lightly with olive oil.

3. Add toppings

  • Spread cranberries evenly across the base.
  • Add sliced red onion.
  • Sprinkle goat cheese over everything.
  • Drizzle honey (and balsamic if using).
  • Add a pinch of salt and black pepper.

4. Bake

  • Bake for 10–15 minutes, until:
    • edges are crisp
    • cheese is soft and slightly golden
    • cranberries are roasted and slightly burst

5. Finish & serve

  • Add fresh arugula after baking (optional but highly recommended)
  • Sprinkle nuts for crunch
  • Drizzle a little extra honey on top
  • Slice and serve warm

🔥 Flavor tips

  • Want it sweeter? Add more honey after baking.
  • Want more savory balance? Add extra goat cheese and herbs.
  • For extra crispiness, pre-bake the flatbread for 3–4 minutes before topping.
