🍌 Greek Yogurt Banana Bread

🧂 Ingredients

  • 3 ripe bananas (very soft, mashed)
  • 1/2 cup Greek yogurt
  • 1/3 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 3/4 cup sugar (you can reduce to 1/2 cup for less sweetness)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional but recommended)

Optional add-ins:

  • 1/2 cup chopped walnuts or chocolate chips

👨‍🍳 Instructions

  1. Preheat oven:
    Set to 175°C (350°F). Grease a loaf pan or line it with parchment paper.
  2. Mash bananas:
    In a large bowl, mash bananas until smooth (a few small lumps are fine).
  3. Mix wet ingredients:
    Add Greek yogurt, oil, eggs, sugar, and vanilla. Whisk until well combined.
  4. Add dry ingredients:
    Stir in flour, baking soda, baking powder, salt, and cinnamon. Mix gently—don’t overmix.
  5. Add extras (optional):
    Fold in walnuts or chocolate chips.
  6. Bake:
    Pour batter into loaf pan and bake for 50–60 minutes, or until a toothpick comes out clean.
  7. Cool:
    Let it cool in the pan for 10–15 minutes, then transfer to a rack.

🍯 Tips for best results

  • Use very ripe bananas (the darker, the better).
  • Don’t overmix—keeps the bread soft and fluffy.
  • Greek yogurt makes it moist without needing too much butter or oil.
  • For extra flavor, sprinkle sugar + cinnamon on top before baking.
