1. Preheat

  • Heat oven to 175°C (350°F)
  • Line a muffin tray with paper liners or grease it lightly

2. Mix dry ingredients

  • In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

3. Mix wet ingredients

  • In another bowl, beat eggs and sugar.
  • Add oil and vanilla, mix until smooth.
  • Stir in grated zucchini.

4. Combine

  • Add dry ingredients into wet mixture.
  • Mix gently—don’t overmix (keeps muffins soft).
  • Fold in nuts or chocolate chips if using.

5. Bake

  • Fill muffin cups about ¾ full.
  • Bake for 18–22 minutes, or until a toothpick comes out clean.

6. Cool & serve

  • Let cool for 10 minutes in pan, then transfer to rack.
