  • Let dough rise 4–6 hours at room temperature.
  • Perform stretch-and-folds every 30–45 minutes for the first 2 hours.

4. Prepare add-ins

  • Mix cream cheese, sugar, and vanilla; chill.
  • Toss blueberries lightly in flour (prevents sinking and bleeding).

5. Shape with fillings

  • Flatten dough gently.
  • Spread cream cheese mixture in the center.
  • Add blueberries on top.
  • Fold dough over and shape into a round loaf.
    (Don’t overmix or blueberries will burst too much.)

6. Final proof

  • Place in a floured banneton or bowl.
  • Refrigerate overnight (8–12 hours) for best flavor.

7. Bake

  • Preheat oven to 230°C (450°F) with Dutch oven inside.
  • Place dough in hot pot, score the top.
  • Bake covered for 20 minutes.
  • Uncover and bake another 20–25 minutes until golden brown.
