Instructions

1. Prepare the Apple Pie:

  1. Preheat the oven to 190°C (375°F).
  2. Peel, core, and slice the apples into even slices.
  3. In a large bowl, toss the apples with sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, vanilla, and a pinch of salt. Make sure they’re well coated.
  4. Roll out your bottom pie crust and place it into a 9-inch (23 cm) pie dish.
  5. Pour the apple mixture into the crust. Spread evenly.
  6. Place the top crust over the apples (either full crust or lattice). Seal the edges and cut a few slits on top for steam to escape.
  7. Optional: Brush the top with a little milk or beaten egg for a golden finish.
  8. Bake for 45–55 minutes, until the crust is golden brown and the apples are tender. Let it cool slightly.

2. Prepare the Custard:

  1. In a small saucepan, heat the milk over medium heat until warm but not boiling.
  2. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth and pale.
  3. Slowly pour a little of the warm milk into the egg mixture, whisking constantly (tempering the eggs so they don’t curdle).
  4. Pour the egg mixture back into the saucepan with the remaining milk.
  5. Cook over medium-low heat, stirring constantly, until it thickens to a pourable custard (about 5–7 minutes).
  6. Remove from heat and stir in the vanilla extract. Let it cool slightly before serving.

3. Serve:

  • Slice the apple pie and pour warm custard over each piece.
  • Optional: Dust with a little cinnamon or nutmeg on top.
