🍫 Chocolate Trail Mix Granola Bars

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup mixed nuts (almonds, cashews, peanuts), chopped
  • 1/2 cup dried fruit (raisins, cranberries, or chopped apricots)
  • 1/2 cup chocolate chips or chunks
  • 1/2 cup nut butter (peanut, almond, or cashew)
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

1️⃣ Prep the Pan

  • Line an 8×8-inch baking pan with parchment paper and lightly grease it.

2️⃣ Toast the Oats & Nuts (Optional)

  • In a dry skillet over medium heat, toast oats and nuts for 3–5 minutes for extra flavor.

3️⃣ Warm the Binder

  • In a small saucepan, gently heat the nut butter and honey (or maple syrup) until smooth. Stir in vanilla and salt.

4️⃣ Combine Ingredients

  • In a large bowl, mix oats, nuts, dried fruit, and chocolate chips.
  • Pour the warm nut butter mixture over the dry ingredients and stir until fully coated.

5️⃣ Press into Pan

  • Transfer the mixture to the prepared pan and press down firmly with a spatula or your hands to compact it.

6️⃣ Chill & Slice

  • Refrigerate 1–2 hours until set.
  • Lift out of the pan using the parchment paper and cut into bars.

Tips for Perfect Bars

  • For chewier bars: Add 2–3 tbsp more nut butter or honey.
  • For crunchier bars: Bake at 325°F (160°C) for 10–12 minutes instead of chilling.
  • Store in an airtight container at room temperature for up to a week or in the fridge for 2–3 weeks.
