Creamy & Cheesy Corn Casserole

Ingredients

  • 2 cans (15 oz each) corn, drained
    (or 3 cups frozen corn, thawed)
  • 1 cup sour cream
  • 1 cup heavy cream (or half-and-half)
  • 2 cups shredded cheddar cheese
    (sharp is best; Colby-Jack works great too)
  • 2 tbsp butter, melted
  • 2 tbsp flour (for thickness)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • Optional: ¼ tsp paprika or cayenne for warmth

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a large bowl, mix sour cream, cream, melted butter, flour, and seasonings.
  3. Stir in corn and 1½ cups of the cheese.
  4. Pour into the dish and sprinkle remaining cheese on top.
  5. Bake 35–40 minutes, until bubbly and lightly golden.
  6. Rest 5–10 minutes before serving (it thickens as it sits).
