Ingredients

  • 1 medium head of cabbage, chopped
  • 1 lb (450 g) ground beef or sausage (optional for meat version)
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (with juice)
  • 2 carrots, sliced
  • 1 cup beef or vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup cooked rice or noodles for serving

Instructions

  1. Layer ingredients in slow cooker:
    • Start with half the chopped cabbage on the bottom.
    • Add ground beef or sausage (if using), breaking it up.
    • Layer onions, garlic, carrots, diced tomatoes, and remaining cabbage on top.
  2. Add broth and seasonings:
    • Pour broth over everything.
    • Sprinkle paprika, thyme, salt, and pepper.
  3. Cook:
    • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until cabbage is tender and flavors meld.
  4. Serve:
    • Spoon over cooked rice or noodles if desired.

Tips

  • For a vegetarian version, skip the meat and add more beans or lentils.
  • Add a splash of apple cider vinegar or a dollop of sour cream when serving for extra tang.
  • Garnish with fresh parsley or chives.
