  • 1 large head Green cabbage
  • 1 lb (450g) ground beef (or beef + pork mix)
  • 1 cup Cauliflower rice (finely chopped)
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup onion, very finely chopped
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt & pepper

  • 1 Β½ cups low-sugar crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tsp erythritol or preferred keto sweetener
  • 1 tbsp olive oil
  • Optional: pinch red pepper flakes

1️⃣ Prep the cabbage

  • Core the cabbage.
  • Boil whole head 5–8 minutes until leaves soften.
  • Gently peel off 10–12 large leaves.
  • Trim thick stem from each leaf so it rolls easily.

2️⃣ Make the filling

Mix:

  • Ground meat
  • Cauliflower rice (raw)
  • Egg
  • Garlic + onion
  • Spices
  • Salt & pepper

(Do not overmix.)

3️⃣ Roll

  • Add 2–3 tbsp filling to each leaf.
  • Fold sides in.
  • Roll tightly like a burrito.

4️⃣ Sauce

Mix all sauce ingredients in a bowl.

5️⃣ Bake

  • Spread a thin layer of sauce in a baking dish.
  • Place rolls seam-side down.
  • Pour remaining sauce over top.
  • Cover with foil.
  • Bake 350Β°F (175Β°C) for 45–55 minutes.

Uncover last 10 minutes for thicker sauce.
