Chewy Oatmeal Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 3 cups old-fashioned rolled oats

Optional add-ins

  • 1 cup raisins (classic!)
  • Chocolate chips
  • Chopped nuts
  • Dried cranberries

Instructions

  1. Preheat oven to 350°F / 175°C. Line baking sheets with parchment paper.
  2. Cream butter & sugars
    • Beat butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs & vanilla
    • Beat in eggs one at a time, then add vanilla.
  4. Mix dry ingredients
    • In a separate bowl, whisk flour, baking soda, salt, and cinnamon.
  5. Combine
    • Gradually mix dry ingredients into wet ingredients.
    • Stir in oats and any add-ins.
  6. Bake
    • Scoop 2 tbsp dough per cookie onto baking sheets.
    • Bake 10–12 minutes, until edges are lightly golden.
    • Centers will look soft — they firm up as they cool.
  7. Cool & enjoy
    • Cool on baking sheet 5 minutes, then transfer to a rack.

  • Crispier cookies: Bake 1–2 minutes longer.
  • Healthier swap: Replace half the flour with oat flour.
