  • 1 small yellow bell pepper, sliced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 tsp dried thyme or Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep chicken: Pat dry and season with salt, pepper, smoked paprika, garlic powder, and onion powder.
  2. Sear chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
  3. Cook veggies:
    • In the same skillet, melt 2 tbsp butter.
    • Add garlic and bell peppers, sauté 2–3 minutes until fragrant but still crisp.
  4. Make the butter sauce:
    • Lower heat to medium. Add remaining butter, chicken broth, heavy cream, and thyme. Stir to combine.
    • Let simmer 2–3 minutes until slightly thickened.
  5. Return chicken: Place chicken back into the pan. Spoon sauce over the top.
    • Cover and simmer 5–7 minutes, until chicken is fully cooked (internal temp 165°F / 74°C).
  6. Serve: Garnish with fresh parsley. Great over rice, mashed potatoes, or pasta to soak up all that cowboy butter goodness.
