- 1 large onion, diced

- 2 celery stalks, sliced
- 1 medium potato, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth or water

- 1 bay leaf

Instructions:
- Sauté veggies:
