Here’s a rich, comforting Dhaba Style Dal Fry recipe—the kind you’d find at roadside eateries, full of smoky flavor and bold tempering:


🍲 Dhaba Style Dal Fry

🧂 Ingredients

For Dal:

  • 1 cup split lentils (mix of toor dal + moong dal works best)
  • 3 cups water
  • 1/2 tsp turmeric
  • 1 tsp salt

For Masala:

  • 2 tbsp oil or ghee (ghee gives dhaba flavor)
  • 1 onion (finely chopped)
  • 2 tomatoes (chopped)
  • 1 tbsp ginger-garlic paste
  • 2 green chilies (slit)
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • Salt to taste

For Tadka (tempering):

  • 2 tbsp ghee
  • 4–5 garlic cloves (sliced)
  • 1–2 dried red chilies
  • 1/2 tsp cumin seeds
  • Pinch of red chili powder

🍳 Instructions

1. Cook the dal

  • Wash lentils well.
  • Cook with water, turmeric, and salt until soft (pressure cooker: 3–4 whistles).
  • Mash slightly for a creamy texture.

2. Prepare masala

  • Heat oil/ghee in a pan.
  • Add cumin seeds, then onions; cook until golden.
  • Add ginger-garlic paste and green chilies.
  • Add tomatoes and cook until soft and oily.
  • Mix in chili powder, coriander powder, and salt.

3. Combine

  • Add cooked dal to the masala.
  • Mix well and simmer for 5–10 minutes.
  • Add garam masala at the end.

4. Final tadka (dhaba magic 🔥)

  • Heat ghee in a small pan.
  • Add garlic slices, cumin seeds, and dried red chilies.
  • Let garlic turn golden.
  • Add a pinch of chili powder and immediately pour over dal.

🍽️ Serve

  • Garnish with fresh coriander and butter (optional).
  • Best enjoyed with roti, naan, or steamed rice.

🔥 Tip (Dhaba-style secret)

For a smoky flavor, place a small piece of hot coal in a bowl inside the dal, drizzle a little ghee on it, and cover for 2 minutes.
