Italian Drunken Noodles is a bold fusion dish—combining the spicy, savory style of Thai drunken noodles with Italian flavors like sausage, tomatoes, garlic, and herbs. It’s rich, slightly spicy, and very satisfying.


🍝 Italian Drunken Noodles (Fusion Pasta)

Ingredients

  • 8–10 oz wide pasta (fettuccine, pappardelle, or linguine)
  • 1 tbsp olive oil
  • 1/2 lb Italian sausage (mild or spicy), sliced or crumbled
  • 1 small onion, sliced
  • 4 cloves garlic, minced
  • 1 bell pepper, sliced (red or green)
  • 1–2 tomatoes, chopped (or 1/2 cup cherry tomatoes)
  • 1/2 tsp chili flakes (adjust to taste)
  • 1 tsp dried oregano
  • 1/2 tsp basil (or fresh basil at the end)
  • Salt & black pepper to taste
  • 1/4 cup chicken broth or pasta water
  • Optional: splash of soy sauce or balsamic vinegar for depth
  • Parmesan cheese for topping

Instructions

1. Cook pasta

Boil pasta in salted water until al dente. Save 1/2 cup pasta water, then drain.

2. Cook sausage

Heat olive oil in a large pan. Cook sausage until browned and slightly crispy. Remove excess fat if needed.

3. Sauté vegetables

Add onion, garlic, and bell pepper. Cook for 2–3 minutes until fragrant and slightly soft.

4. Build flavor

Add tomatoes, chili flakes, oregano, basil, salt, and pepper. Cook until tomatoes break down slightly.

5. Combine

Add cooked pasta and a splash of broth or pasta water. Toss everything together until well coated and glossy.

6. Finish

Adjust seasoning. Top with fresh basil and grated Parmesan.


🌶️ Tips

  • For more “drunken noodle” heat, add extra chili flakes or fresh green chilies.
  • A splash of cream makes it richer and slightly creamy.
  • Works great with shrimp or chicken instead of sausage.
