🌶️🌠Sausage and Peppers
A simple, rustic Italian-American dish with juicy sausage, sweet peppers, and onions—great in a roll, over pasta, or with rice.
Ingredients
- 1 lb Italian sausage (mild or spicy), whole or sliced
- 2–3 bell peppers (red, green, yellow), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/2 tsp dried oregano
- 1/2 tsp dried basil (or Italian seasoning)
- Salt & black pepper to taste
- Optional: pinch of chili flakes
- Optional: 1/2 cup crushed tomatoes or marinara (for saucier version)
Instructions
1. Brown the sausage
Heat 1 tbsp olive oil in a large skillet.
Cook sausages until browned on all sides (they don’t need to be fully cooked yet). Remove and set aside.
2. Cook vegetables
In the same pan, add remaining oil.
Sauté onions and peppers for 6–8 minutes until softened. Add garlic and cook 30 seconds.
3. Combine & simmer
- Slice sausages (or keep whole) and return to pan
- Add oregano, basil, salt, pepper, and chili flakes
- Optional: add crushed tomatoes for a saucier version
- Cover and simmer 10–15 minutes until sausage is fully cooked and flavors blend
