🍜 1. Stir-Fried Noodles (Veg or Chicken Chow Mein Style)

A quick, smoky wok-style noodle dish loaded with veggies and flavor.

🧾 Ingredients

  • 200g noodles (egg noodles or spaghetti)
  • 2 tbsp oil (preferably sesame or any neutral oil)
  • 2–3 cloves garlic (chopped)
  • 1 onion (sliced)
  • 1 cup mixed vegetables (cabbage, carrot, capsicum, beans)
  • Optional: cooked chicken or prawns
  • 2 tbsp soy sauce
  • 1 tbsp chili sauce
  • 1 tsp vinegar
  • Salt & black pepper to taste
  • Spring onions (for garnish)

👨‍🍳 Method

  1. Boil noodles until just cooked → drain and toss with a little oil.
  2. Heat oil in a wok or large pan.
  3. Sauté garlic and onions on high flame.
  4. Add vegetables → stir-fry quickly (keep them crunchy).
  5. Add chicken (if using) and cook through.
  6. Add sauces (soy, chili, vinegar, salt, pepper).
  7. Toss in noodles and mix on high heat for 1–2 minutes.
  8. Finish with spring onions.

💡 Tip

High flame = restaurant-style smoky flavor (“wok hei”).


🍗 2. Gravy-Based Chicken Dish (Indian Restaurant Style)

A rich, spicy chicken curry perfect with rice, naan, or roti.

🧾 Ingredients

  • 500g Chicken curry cut
  • 2 onions (finely chopped or blended)
  • 2 tomatoes (pureed)
  • 2 tbsp ginger-garlic paste
  • ½ cup yogurt (optional for richness)
  • 2–3 tbsp oil
  • 1 tsp turmeric
  • 2 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • Salt to taste
  • Fresh coriander for garnish

👨‍🍳 Method

  1. Heat oil and sauté onions until golden brown.
  2. Add ginger-garlic paste → cook until raw smell disappears.
  3. Add tomato puree + spices → cook until oil separates.
  4. Add chicken pieces → sauté well until sealed.
  5. Add yogurt (optional) and mix.
  6. Add water for gravy consistency.
  7. Cover and simmer 20–25 minutes until chicken is tender.
  8. Finish with garam masala and coriander.

🍽️ Serve with

  • Steamed rice
  • Naan or roti
  • Salad + raita

💡 Tip

  • Brown onions well → gives deeper “restaurant-style” gravy
  • Slow simmering makes chicken more tender and flavorful
