  • 1 tsp dried thyme or rosemary
  • 1 bay leaf
  • 2 tbsp flour or cornstarch (for thickening, optional)

  • 1 kg potatoes (peeled or unpeeled)
  • 3โ€“4 tbsp butter
  • 1/2 cup milk or cream
  • Salt to taste
  • Black pepper (optional)

1. Sear the beef (important for flavor)

  • Heat oil in a pan over medium-high heat.
  • Sear roast on all sides until deeply browned.
  • Transfer to slow cooker.

2. Build the slow cooker base

  • Add onions, garlic, carrots, and optional potatoes around the beef.
  • Mix beef broth, Worcestershire sauce, tomato paste, salt, pepper, thyme, and bay leaf.
  • Pour over everything.

3. Slow cook

  • Cook:
    • Low: 8โ€“9 hours
    • High: 4โ€“5 hours
  • Beef should be fork-tender and falling apart.

4. Make gravy (optional but recommended)

  • Remove beef and vegetables.
  • Mix 2 tbsp flour or cornstarch with a little water.
  • Stir into slow cooker juices.
  • Cook on high for 10โ€“15 minutes until thickened.

5. Make mashed potatoes

  • Boil potatoes in salted water until soft (15โ€“20 minutes).
  • Drain well.
  • Mash with butter, milk/cream, salt, and pepper until smooth and creamy.
