- 1.2–1.5 kg beef chuck roast
- 2 tbsp oil
- 1 tsp salt
- 1 tsp black pepper

- 1 large onion (chunked)
- 3–4 carrots (cut into chunks)
- 3–4 potatoes (chunked)
- 4 cloves garlic (smashed)
🍲 Cooking Liquid
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tsp thyme or rosemary
- 1 bay leaf
👩🍳 Instructions
1. Sear the beef (key step)
- Heat oil in a pan over medium-high heat.
- Season roast with salt and pepper.
- Sear all sides until browned (3–4 minutes per side).
2. Build the pot
- Place onions, carrots, potatoes, and garlic in a slow cooker or pot.
- Set seared roast on top.
3. Add liquid
- Mix broth, Worcestershire sauce, tomato paste, and herbs.
- Pour over the roast.
4. Cook low & slow
Slow cooker:
- Low: 8–9 hours
- High: 4–5 hours
Oven method:
- Cover and cook at 160°C (320°F) for 3–4 hours
5. Make gravy (optional)
- Remove roast and vegetables.
- Mix 2 tbsp flour or cornstarch with water.
- Stir into cooking liquid and simmer until thick.
