🍪 Brownie Mix Cookies (Easy Recipe)

Ingredients

  • 1 box brownie mix (about 450–500 g)
  • 2 large eggs
  • 1/3 cup (80 ml) vegetable oil
  • 2–4 tablespoons flour (optional, for thicker cookies)
  • Optional add-ins: chocolate chips, nuts, crushed Oreos

Instructions

  1. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a bowl, mix brownie mix, eggs, and oil until a thick dough forms.
  3. If the dough feels very soft or sticky, add 2–4 tablespoons flour to make it easier to shape.
  4. Stir in any extras like chocolate chips or nuts.
  5. Scoop spoonfuls of dough onto the tray, leaving space between each (they spread).
  6. Bake for 8–12 minutes:
    • 8–9 min = very fudgy
    • 10–12 min = slightly firmer cookies
  7. Let them cool on the tray for 5–10 minutes before moving (they set as they cool).

  • Don’t overbake—brownie cookies go dry fast.
  • Chill the dough for 15–20 minutes if it’s too sticky to scoop.
  • Sprinkle a little sea salt on top before baking for a bakery-style touch.
