🍲 Chicken Noodle Soup (Classic & Comforting)

Warm, soothing, and full of flavor—this is a simple homemade chicken noodle soup with tender chicken, soft noodles, and a savory broth.

🧾 Ingredients

🍗 Base

  • 500–700g chicken (breast or thighs)
  • 1 tbsp oil or butter
  • 1 onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 3 cloves garlic (minced)

🍲 Soup

  • 6 cups chicken broth
  • 1–2 cups water (as needed)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp thyme or mixed herbs
  • 1 bay leaf

🍜 Noodles

  • 1–2 cups egg noodles (or any pasta)

🌿 Optional

  • Fresh parsley (for garnish)
  • Lemon juice (for brightness)

👩‍🍳 Instructions

1. Build the base

  • Heat oil in a large pot over medium heat.
  • Add onion, carrots, and celery.
  • Cook 5–7 minutes until softened.
  • Add garlic and cook 30 seconds.

2. Simmer the soup

  • Add chicken, broth, water, salt, pepper, thyme, and bay leaf.
  • Bring to a boil, then reduce to a gentle simmer.
  • Cook 20–25 minutes until chicken is fully cooked.

3. Shred chicken

  • Remove chicken, shred it, then return it to the pot.

4. Add noodles

  • Add noodles and cook 8–10 minutes until tender.

5. Finish

  • Taste and adjust seasoning.
  • Add a squeeze of lemon juice if desired.
