Carrot cake

Carrot cake is a moist, spiced cake made with grated carrots, usually flavored with cinnamon and topped with cream cheese frosting. It’s popular because the carrots add natural sweetness and keep the cake soft.

🥕 Classic carrot cake (simple home recipe)

Ingredients (cake):

  • 2 cups grated carrots (about 3–4 medium carrots)
  • 1 ½ cups all-purpose flour
  • 1 cup sugar (white or brown, or mixed)
  • ½ cup oil (vegetable or sunflower)
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1–2 tsp cinnamon
  • ½ tsp salt
  • Optional: chopped walnuts or raisins

Cream cheese frosting:

  • 200 g cream cheese
  • ½ cup butter (softened)
  • 1–1½ cups powdered sugar
  • 1 tsp vanilla extract

🍰 Instructions

  1. Preheat oven to 175°C (350°F). Grease a cake pan.
  2. Mix eggs, sugar, and oil until smooth.
  3. Add grated carrots and mix well.
  4. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  5. Fold dry ingredients into wet mixture.
  6. Add nuts or raisins if using.
  7. Bake for 30–40 minutes (until a toothpick comes out clean).
  8. Let cool completely.
  9. Beat frosting ingredients together and spread on top.
