Ingredients (1–2 sandwiches)

  • 4 slices thick bread (sourdough or Texas toast works best)
  • 200g shrimp (peeled & deveined)
  • 2–3 tbsp butter (softened)
  • 3–4 garlic cloves (minced)
  • 1 cup shredded cheese (mozzarella + cheddar mix is ideal)
  • Salt & black pepper
  • Chili flakes (optional)
  • Parsley (optional)
  • 1 tbsp mayonnaise (optional but helps crispiness)

Step 1: Garlic Butter Base

Mix:

  • Soft butter
  • Minced garlic
  • Pinch of salt
  • Parsley (optional)

Spread this on one side of each bread slice.


Step 2: Cook the Shrimp

  • Heat a pan with a little butter or oil
  • Add shrimp, salt, pepper, and chili flakes
  • Cook 2–3 minutes per side until pink and slightly golden
  • Optional: squeeze a little lemon for brightness

Set aside.


Step 3: Build the Sandwich

On the non-buttered side of bread:

  • Add cheese
  • Add cooked shrimp
  • Add more cheese (this helps glue it together)
  • Close sandwich

Step 4: Grill It

  • Heat a pan on medium-low
  • Place sandwich butter-side down
  • Press lightly with spatula
  • Cook 3–4 min per side until golden brown and cheese melts fully

Tip: Low heat is key so the bread doesn’t burn before cheese melts.


Step 5: Serve

Cut in half and serve immediately while gooey.

  • Stretchy melted cheese like a Grilled cheese sandwich
