🧀 Cottage Cheese Cheddar Biscuits

These biscuits are soft, flaky, and extra moist thanks to cottage cheese, with a sharp cheddar flavor and a golden crust. They’re great as a side for soups, breakfast, or snacking.

🛒 Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 1/4 cup cold butter, cubed
  • 1/2 cup cottage cheese Cottage cheese
  • 1/2 cup shredded cheddar cheese Cheddar cheese
  • 1/3 cup milk (as needed)

Optional topping:

  • Melted butter
  • Parsley or extra cheese

🔥 Step 1: Mix dry ingredients

  • In a bowl, whisk flour, baking powder, salt, and garlic powder.

🧈 Step 2: Cut in butter

  • Add cold butter cubes.
  • Rub or cut into flour until crumbly (like coarse sand).

🧀 Step 3: Add cheese & cottage cheese

  • Stir in cheddar cheese.
  • Add cottage cheese and gently mix.
  • Add milk little by little until a soft dough forms (don’t overmix).

🫓 Step 4: Shape biscuits

  • Preheat oven to 200°C (400°F).
  • Drop spoonfuls of dough onto a baking tray (rustic shape is fine).

  • Bake for 12–15 minutes until golden on top and fluffy inside.

  • Brush with melted butter while warm.
  • Sprinkle parsley or extra cheese if desired.
