Ingredients

  • 1 head cauliflower (cut into florets)
  • 2–3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika (or smoked paprika for extra flavor)
  • Optional: grated Parmesan, chili flakes, lemon juice

Instructions

  1. Preheat oven to 425°F (220°C). High heat = crispiness.
  2. Dry the cauliflower well after washing (this is key for crisp).
  3. Toss florets with olive oil, salt, pepper, and seasonings.
  4. Spread on a baking sheet in a single layer (don’t crowd).
  5. Roast for 25–30 minutes, flipping halfway through.
  6. For extra crisp, broil for 2–3 minutes at the end.

Finishing touches (optional)

  • Sprinkle Parmesan right after roasting
  • Squeeze fresh lemon juice
  • Add a drizzle of tahini or hot sauce

Pro tips

  • Use a hot, preheated baking sheet for even more browning
  • Bigger florets = softer inside, smaller = crispier
  • Don’t skip spacing—steam = soggy
