🥞 Fluffy Pancakes

Ingredients

  • 1 cup (125g) all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 1 cup (240ml) milk (room temperature)
  • 1 egg
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tsp vanilla extract (optional)

👩‍🍳 Instructions

1. Mix dry ingredients

In a bowl, whisk:

  • flour
  • sugar
  • baking powder
  • baking soda
  • salt

This ensures even rising.


2. Mix wet ingredients

In another bowl, whisk:

  • milk
  • egg
  • melted butter
  • vanilla

3. Combine (don’t overmix!)

Pour wet into dry and stir gently.

  • Lumps are fine
  • Overmixing = flat pancakes

Let batter rest 5–10 minutes.


4. Cook

  • Heat pan on low-medium
  • Lightly butter it
  • Pour small ladle of batter

Cook until bubbles form on top → flip.

Cook other side 1–2 minutes until golden.

Top with:

  • butter + syrup
  • honey
  • fruit
  • chocolate drizzle
