1. Marinate the fish

  • Soak catfish fillets in buttermilk for at least 30 minutes (helps remove any strong taste and keeps it tender).

2. Prepare coating

  • In a bowl, mix cornmeal, flour, salt, pepper, paprika, garlic powder, and cayenne.

3. Coat the fish

  • Remove fillets from buttermilk.
  • Let excess drip off.
  • Dredge in cornmeal mixture, pressing lightly so it sticks well.

4. Fry

  • Heat oil to 175–180Β°C (350–360Β°F).
  • Fry fillets 3–5 minutes per side until golden brown and crispy.
  • Drain on paper towels.
