🧾 Ingredients

  • 2 cups cooked rice (best if cold/leftover)
  • 2–3 tbsp oil
  • 2 eggs (optional but recommended)
  • 2–3 garlic cloves (minced)
  • ½ onion (chopped)
  • ½ cup mixed vegetables (peas, carrots, corn)
  • 2–3 tbsp soy sauce
  • ½ tsp black pepper
  • Salt to taste
  • 1–2 spring onions (optional)

1. Prep the rice

Use cold, separated rice grains (fresh hot rice will turn mushy).


2. Cook eggs (optional but tasty)

  • Heat 1 tbsp oil
  • Scramble eggs until just cooked
  • Remove and set aside

3. Stir-fry aromatics

  • Add oil to pan/wok
  • Sauté garlic + onion until fragrant

4. Add vegetables

Cook 2–3 minutes until slightly soft but still crisp.


5. Add rice

  • Break up any clumps
  • Stir-fry on high heat so it stays fluffy

6. Season

Add:

  • soy sauce
  • black pepper
  • salt (if needed)

Toss everything well.


7. Finish

Add scrambled eggs back in.
Top with spring onions and give a final toss.
