Mac and Cheese Meatloaf Casserole

Posted on April 22, 2026 by Admin

A Mac and Cheese Meatloaf Casserole is pure comfort food in one dish: juicy meatloaf on the bottom, creamy mac and cheese on top, baked together until golden and bubbly.

Here’s a solid, crowd-pleasing version.

🧀🍖 Mac and Cheese Meatloaf Casserole

🥩 Meatloaf Base

Ingredients:

  • 500g (1 lb) ground beef (or mix beef + pork)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 egg
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)

Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Mix all ingredients until just combined (don’t overwork).
  3. Press mixture into a greased baking dish (or casserole pan).
  4. Spread a thin layer of ketchup on top for glaze (optional).
  5. Bake for 20–25 minutes until mostly cooked.

🧀 Creamy Mac and Cheese Layer

Ingredients:

  • 2 cups elbow macaroni (cooked al dente)
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella (optional for stretch)
  • ½ tsp salt
  • ½ tsp mustard powder (optional but boosts flavor)
  • Black pepper to taste

Instructions:

  1. Melt butter in a pot, whisk in flour (1–2 min).
  2. Slowly add milk, whisking until thickened.
  3. Stir in cheese until smooth and creamy.
  4. Mix sauce with cooked macaroni.

🍽️ Assembly

  1. Remove partially baked meatloaf from oven.
  2. Spoon mac and cheese evenly over the top.
  3. Sprinkle extra cheese on top if you like a crust.
  4. Bake again for 15–20 minutes until bubbling and golden.

🔥 Optional Toppings (Highly Recommended)

  • Crispy breadcrumbs mixed with butter
  • Extra cheddar cheese crust
  • Chopped parsley
  • Hot sauce drizzle for heat lovers

🍴 Pro Tips

  • Let it rest 10–15 minutes before cutting so layers hold together.
  • Use sharp cheddar for stronger flavor contrast with meat.
  • For extra richness, mix a bit of cream cheese into the mac sauce.

If you want, I can also make a spicy jalapeño version, a BBQ bacon version, or a one-pan skillet shortcut version.
