🍲 Marry Me Chicken Soup

This is a creamy, comforting soup version of the famous “Marry Me Chicken”—rich, garlicky, slightly tangy, and loaded with flavor. It’s the kind of dish that tastes like it took hours, but comes together pretty easily.

🛒 Ingredients

Main:

  • 2 tbsp olive oil or butter
  • 1 small onion (finely chopped)
  • 4 cloves garlic (minced)
  • 1 lb chicken breast or thighs, diced Chicken
  • Salt & black pepper

Flavor base:

  • 1 tsp chili flakes (optional but recommended)
  • 1 tsp dried oregano or Italian herbs
  • 1 tsp paprika
  • 2 tbsp tomato paste
  • 4 cups chicken broth

Creamy finish:

  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup spinach (optional but great)
  • 1/2 cup sun-dried tomatoes (key “marry me” flavor)

Optional add-ins:

  • Pasta or small shells
  • Crusty bread for serving

🔥 Step 1: Cook the chicken

  • Heat oil in a large pot.
  • Season chicken with salt and pepper.
  • Sauté until lightly golden (it doesn’t need to be fully cooked yet).
  • Remove and set aside.

🧄 Step 2: Build the flavor base

  • In the same pot, add onion and cook until soft.
  • Add garlic and cook 30 seconds.
  • Stir in chili flakes, paprika, oregano, and tomato paste.
  • Cook for 1–2 minutes until fragrant.

🍲 Step 3: Make it a soup

  • Pour in chicken broth and stir well.
  • Add sun-dried tomatoes.
  • Return chicken to the pot.
  • Simmer 10–15 minutes until chicken is tender.

🥛 Step 4: Make it creamy

  • Lower heat.
  • Stir in heavy cream and parmesan cheese.
  • Add spinach if using and let it wilt.
  • Adjust salt and pepper.

🍽️ Step 5: Serve

  • Serve hot with crusty bread or over pasta if you want it more filling.
