🥩 Meat Chops (Mutton/Beef Chops Recipe)

“Meat chops” usually refers to mutton or beef rib chops, cooked tender and spiced—very popular in South Asian cooking.


🍖 Ingredients

  • 1 kg mutton or beef chops (ribs or shoulder cut)
  • 1 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 2–3 green chilies (crushed)
  • 1 tbsp red chili powder
  • 1 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • 2 tbsp lemon juice
  • 2–3 tbsp oil or ghee
  • Optional: garam masala, crushed black pepper

👩‍🍳 Instructions

1. Marinate the meat

  • Mix yogurt, spices, ginger-garlic, lemon juice, and oil
  • Coat chops well
  • Marinate for at least 2–4 hours (overnight = best)

2. Cook (two methods)

🔥 Stovetop method (juicy & traditional)

  • Add marinated chops to a pot
  • Cook on medium heat until water releases
  • Cover and simmer for 45–70 minutes until tender
  • Finish with high heat to dry and brown the masala

🍳 Grill / pan method (charred style)

  • Sear chops in a hot pan or grill
  • Cook 4–6 min per side depending on thickness
  • Brush with butter or ghee for extra flavor

3. Final touch

  • Sprinkle garam masala
  • Add fresh coriander and lemon juice
  • Serve hot

🍽️ Best served with

  • Naan or roti
  • Mint chutney
  • Fries or salad

💡 Tips

  • Slow cooking = tender meat
  • Don’t skip marination (this is where flavor develops)
  • For restaurant-style smoky taste, add a small piece of coal (dhungar method)
