🌽 Mexicorn (Creamy Mexican-Style Corn Salad)

Mexicorn is a sweet, creamy, and slightly tangy corn side dish—often served at BBQs and potlucks. It’s quick, simple, and very flavorful.


🧾 Ingredients

  • 2 cans sweet corn (or 3 cups cooked corn)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1–2 tbsp lime juice (or lemon juice)
  • 1/2 tsp chili powder
  • 1/4 tsp salt (to taste)
  • 1–2 tbsp chopped cilantro (optional)
  • Optional: diced jalapeños for heat 🌶️

👩‍🍳 Instructions

1. Prep corn

  • Drain canned corn well (or boil fresh corn and cut kernels off)

2. Mix creamy base

  • In a bowl, combine:
    mayo + sour cream + lime juice + chili powder + salt

3. Combine everything

  • Add corn + cheese + cilantro
  • Mix until evenly coated

4. Chill (recommended)

  • Refrigerate for 20–30 minutes so flavors blend

🍽️ Serve

  • Serve cold or slightly chilled
  • Great with BBQ, grilled chicken, burgers, or tacos 🌮

💡 Tips

  • Add paprika or Tajín for extra flavor
  • Use grilled corn for a smoky taste
  • Make it spicier with hot sauce or jalapeños
