🍫🥥 No-bake chocolate coconut oatmeal clusters

These are quick, no-oven treats made by mixing oats, chocolate, and coconut into bite-sized clusters that set in the fridge.


🧾 Ingredients

  • 2 cups rolled oats
  • ½ cup shredded coconut
  • ½ cup peanut butter (or any nut butter)
  • ⅓ cup honey or maple syrup
  • ½ cup melted chocolate (dark or milk)
  • 1 tsp vanilla extract (optional)
  • Pinch of salt

👩‍🍳 Method

1. Mix base

  • In a bowl, combine oats + coconut + salt

2. Add binding ingredients

  • Stir in peanut butter, honey, and vanilla
  • Mix until everything sticks together

3. Add chocolate

  • Fold in melted chocolate (or drizzle later for coating)

4. Shape clusters

  • Scoop small spoonfuls onto a tray lined with parchment paper
  • Press lightly into “cluster” shapes

5. Chill

  • Refrigerate for 30–60 minutes until firm

❄️ Optional upgrades

  • Add chopped nuts (almonds, walnuts)
  • Add raisins or dried cranberries
  • Sprinkle sea salt on top
  • Use white chocolate drizzle for contrast

🧠 Storage

  • Store in fridge: up to 1 week
  • Freezer: up to 1 month
